pistachio pesto grilled steak

the perfect dinner - tender steak grilled in homemade pistachio pesto, topped with melty brie cheese and served with a side of roasted potatoes, tomatoes & shiitake mushrooms

PISTACHIO PESTO GRILLED STEAK

what you’ll need

for the pesto

  • 1/3 cup pistachios, shelled

  • 1/3 cup nutritional yeast OR parmesan cheese

  • 1/2 cup olive oil

for the steak

  • lean cut steak

  • brie cheese

what to do

  • in a high speed blender or food processor, blend pistachios, nutritional yeast or parmesan and olive oil until desired consistency is reached

  • place the steak in the pesto to marinate

  • grill the steak on a grill pan on low heat until cooked to your liking

  • any excess pesto will start to become crispy in the grill. save this as a topping.

  • once the steak starts to get close to being done, add thin slices of brie to the top so it gets melty

  • remove steak from heat, top with any additional pesto and enjoy as is or with a side of roasted potatoes, mushrooms and tomatoes
